Our wheat is grown locally on our farm that follows organic inspired and regenerative farming practices! (Certain varieties may be sourced from other local farms that share the same chemical free and regenerative practices.)
Linkert: A high protein, hard red great for baking breads and rolls. Nutty and bold flavor profile.
Red Fife: Lower protein, hard red wheat that works well to mix with your all-purpose flour. Ideal for breads, muffins, and certain pastries. Nutty and sweet flavor profile.
Soft Red Wheat: Lower protein. Excellent choice for baking cakes, cookies, pastries, and quick breads. Mild and slightly sweet flavor profile.
Buckwheat: Can be used in replacement to wheat berries. Gluten-free and contains a complete protein. Sweet and nutty flavor profile.
